Add ingredients by cook time: potatoes first (about 15β20 minutes), then sausage and corn, then shellfish at the end since it cooks fast. Don't overcook the seafood. Drain and dump on a newspaper-covered table.
Cook live crabs, lobsters and other shellfish alive and discard any that died before cooking. Keep them cool and damp, not submerged in fresh water. Cooked shells turn bright red-orange.
Refrigerate cooked crab within 2 hours (1 hour if it's above 90Β°F outside) and use within about 3β4 days. Turn leftovers into crab cakes or crab salad. Never a bad problem to have.
Bend the leg at the joint to snap it apart and pull out the meat. Use kitchen shears to cut along the shell for bigger pieces. Have melted butter, lemon wedges and a lot of napkins ready.
Cover a table with newspaper or brown paper, put out mallets, crackers, shears, butter, lemon, hot sauce and two trash buckets for shells. Lots of paper towels. Fancy plates not required.
